I was a bit concerned about going on the trek to Salkantay with my
gluten allergy. I was going to bring nuts and energy bars just in case
there was nothing I could eat. When I had informed Jesus about my
dietary issues and really wanted to know what I could and couldn't eat
to cater to my needs. His chef, Fernando (yes, they have a chef)
completely made sure that every meal I had that a full meal to eat. He
would prepare me separate dishes of quinoa, rice, or fish without
breading, or even my own little cake to accomodate my needs.
The trek itself was challenging and my group had made some adjustments with our plans and our guide, Victor adjusted as needed.
There
were a few suggestions that we shared with them, like the restaurant at
Aguas Caliente was below par, but other than that I was very happy with
my experience and felt taken care of.
